For the Roll Cake
- 2 3/4 cups all-purpose flour (400g)
- 1 1/4 cups unsweetened cocoa powder (100g)
- 3/4 cup white sugar (a pinch of salt)
- 3 cups hot water (600ml)
- 1 1.1 ounces (30g) package of active dry yeast (use 1/2 a package if using fresh yeast)
- 1/2 cup warm water (100ml)
- 1/2 cup vegetable oil (120ml)
- 4 large eggs, lightly beaten
- 1 tsp. ground cinnamon
- 1 tsp. salt
- 1 1/3 cup butter, room temperature
- For the Cream Cheese Icing
- 8 oz. cream cheese (1 cup)
- 1/2 cup butter, softened (120g)
- 2 1/2 pound powdered sugar (300g)
- 1 tsp. vanilla extract
Directions:
Make the Cake:
Step 1. Mix the flour and cocoa powder in a medium bowl and set aside.
Step 2. In a saucepan over medium heat, heat the water and oil. Stir in the yeast and warm water. Let stand 5 minutes until foamy.
Step 3. Add the beaten eggs, oil, cinnamon, salt, and butter to the yeast mixture and stir to combine.
Step 4. Add the flour and cocoa powder to the yeast mixture, stirring until a thick batter forms (approximately 5 minutes). Remove from heat and pour into a well-greased 9×13 in. pan.

Step 12. In a bowl, beat the cream cheese icing, butter, and vanilla extract until smooth. Cover and refrigerate until ready to use.
Step 13. Place a roll cake on a serving plate and spread with the frosting to assemble the cake. Repeat with remaining cakes.
